Grilled Cheese Sandwich with Fresh Tomato Soup



This all-time favourite snack can be enjoyed at anytime of the day. This recipe recommends the use of fresh tomatoes and basil to fully maximize the flavours. Expect an explosion of flavours everytime you dip the grilled cheese into the soup.


 
Ingredients:

8 slices of bread
butter
honey (about 4 tablespoon)
grated Monterey Jack Cheese (this will depend on how much cheese you want in your sandwich)
grated Cheddar Cheese (this will depend on how much cheese you want in your sandwich)

Tomato Soup:

4 medium tomatoes
1 medium red onion
4 cloves garlic
2 cups chicken stock
5 grams basil leaves
dash of chili flakes
dash of salt and pepper

Garnish:

Parsley


1. Saute garlic over medium heat. Add in the onions.

2. Add in the tomatoes.

3. Once the tomatoes have softened, add in the chicken stock and basil leaves and simmer over low to medium heat for about 5 minutes.

4. Turn off heat. Once it has cooled down, transfer to a food processor and pulse until no chunks are left.

5. Pour back the tomato soup in the pan and heat up when ready to serve.

6. Spread butter and honey on all slices of bread.

7. Add in the cheeses on one side of the brea and top off with another slice of bread.

8. Serve and enjoy!
