Grilled Chicken with Mango Salsa and Saffron Couscous


It's a couple more days till Valentines! If you're wanting to celebrate at home to beat the traffic, then you might want to try out my Grilled chicken recipe topped off with the freshest salsa and served with Saffron Couscous! This recipe knows no boundaries! Serve it to your lover, friends, or family!

Serving: 4-6

Ingredients:

6 pcs chicken breast fillet
1 cup oyster sauce
Juice of 1 lemon
Dash of cumin
Dash of salt and pepper

Couscous:

1/3 cup butter
10g saffron
1 ½ cup couscous
4 cups chicken stock

Salsa:

2 ripe mangoes, diced
1 large red onion
1 medium red bellpepper
1 medium green bellpepper
Dash of chili flakes
20g basil, chopped

Garnish:

Chopped green onions



1. Pound chicken over cling wrap using a rolling pin. Flatten on all sides.

2 . In a bowl, mix oyster sauce, lemon, cumin, salt and pepper. Marinate chicken fillets in the mixture. Set aside.

3.    Melt butter in a pan then add in the saffron. Sauté for about 30 seconds. Add in the couscous and chicken stock. Cover the pan and set aside for 5 minutes until the couscous absorbs all the liquid. When done, fluff using a fork.

4.    In a bowl, mix in all the ingredients for the salsa. Set aside.

5.    Fry chicken fillets on a griller until brown on both sides.

6.    Set couscous and chicken on a plate and top off with salsa. Garnish with chopped green onions.
