Ultimate Breakfast Burrito


People find it strange that I don't eat beef, pork, and rice. However, I don't worry about it as it gives me the urge to be more creative in the kitchen. Breakfast is the most important meal of the day. You can get all the yummy goodness of an ultimate breakfast all rolled into one with this recipe. Enjoy!



Serving: 7 rolls cut into 2 (14 rolls)

Ingredients:

7 pcs 12" diameter Pita
400g chicken longganisa, about 10pcs
7 pcs hashbrown
5 eggs
2 tbsp mustard
1/4 cup cream (optional)
Dash of salt and pepper

Salsa:

2 medium tomatoes, finely chopped
1 medium white onion, finely chopped
5 cloves garlic, finely chopped
1/4 cup cilantro, finely chopped
1 medium green bellpepper, finely chopped
1 medium red bellpepper, finely chopped
Juice of 1 lemon
Dash of salt and pepper

Sauce:

1 cup yogurt
7 cloves garlic


1. Fry the chicken longganisa until crispy on the outside. Once all cooked, use a fork to mash into small bits.

2. Fry hashbrown until crispy on both sides.

3. Make scrambled eggs minus all the vegetables. Add cream if you opt to. Recipe on this link: Scrambled Eggs.

4. Mix all the ingredients for the salsa in bowl.

5. Pour yogurt in a blender or food processor. Add in the garlic cloves and dash of salt and pepper. Pulse for 1-3 minutes or until garlic cloves are mashed. You can strain the sauce but i opt not to.

6. Line the ingredients on the center of the pita bread. Fold the top and bottom of the pita and then roll from left to right. Make sure it's tight enough on all sides but do it carefully as the pita can break.


7. Once rolled, cut down in the middle and serve with the yogurt sauce.
